Restaurant VMF ace Miller aims to prove he's young chef of the year

Miller is a highly-rated foodie who works in the club's Restaurant VMF. He will take on the cream of the crop at the prestigious British Culinary Federation ceremony, held in University College, Birmingham on November 12. Miller takes on Arron Jones [Moat House Hotel, Acton Trussell], Marie Kenny [University College Birmingham], Leonidas Kattou [Simpson's Restaurant, Birmingham], Daniel Lee [Woodland Park Hotel, Leatherhead], Wayne Herrington [Stoke Park, Stoke Poges, Bucks], Gareth Wayt [Opus Restaurant, Birmingham] and William Tranter [The Queens, Belbroughton]. It's a live cook-off over three courses and the aim is to impress the panel of judges on hand. Miller will be making slow cooked cod loin, yellow foot chantrelle mushroom risotto, parsley sauce followed by best end of lamb reforme, air dried tongue, beetroot, fondant potato and savoy cabbage. The delightful final course - the dessert - is naymbo chocolate tart with fresh raspberries and chantilly cream. Remember Restaurant VMF is open every Friday, Saturday and Sunday and serves sumptuous food. It has gained quite some reputation for glorious grub, ace ambience and stunning service.
